Day 62: Prep Day!


It's PREP DAY!!! It was a bit of a mad dash prep day, since this morning we went to church, then over to some friends' house to watch the Seattle Seahawks!! Then we came home, I made dinner, and all the rest of the food, and my hubby and I played Settlers of Cattan and over lasagna.

What did I make??
Zucchini lasagna
Quinoa (for taco bowls)
Quinoa sushi
HBE's
Cut canteloupe
Individual size portions of sliced turkey
Grab & Go fresh veggies with pumpkin hummus
Marinated cilantro-lime pesto chicken (for taco bowls)
Meaty marinara sauce for spaghetti squash "spaghetti" & meatballs

Whew!! It feels good. REALLY good. I think there are very few things more satisfying than a fully stocked fridge of grab & go and/or ready to eat meals. There's at least enough to last my hubby & I through my work week (Mon thru Wed, lunches and dinners)

So, as for the rest of the day...

FOOD
Breakfast: scrambled eggs (1 whole, 2 whites) with cheese, WW toast with plumcot jam and 1/2 a mango
Snack: a pear
Lunch: taco salad
Snack: red wine sorbet :)
Dinner: zucchini lasagna and mini bell peppers

EXERCISE
Weekend means rest. Especially on Sunday, especially with a Seahawks game
