Oven-Roasted Tomato Sauce

This recipe is great for using up your tomatoes, if you have a garden, and it's the end of tomato season. The tomatoes don't have to be perfect or pretty, just chop 'em up and put 'em in!!!

This sauce is wonderful as a pasta sauce (you can add meat to it also!) or pizza sauce!

Ingredients

8 medium to large tomatoes, roughly chopped
1 yellow sweet onion, roughly chopped
3-4 TBS of chopped garlic (depending on how garlicky you like it)
2 tsp red pepper flakes
1 large bunch of fresh basil, leaves removed and chiffonade cut

I small can of tomato-paste (optional)

Directions: Preheat the oven to 400* before you start chopping. Place all ingredients (except the tomato paste) on a large roasting pan with a lip, so the juices don't run over into the oven and make a mess :) Roast for about 45 minutes. Then, remove from the oven, and let cool for about 20 minutes. Place all the ingredients (including tomato paste) into an immersion blender or food processor, and puree'. Then, place it in a bag and freeze it for later use.
