Day 68: Comfort Food-Healthified!




I don't think I am an exceptional cook. My husband thinks that I am, but my secret is, I LOVE to EAT!! Yes, I love to eat and certain foods are ones that even with the project, I can't imagine my life without. So tonight for inspiration for dinner (and dessert) I jumped on Pinterest and grabbed a few recipes that I have been wanting to try (Bear wanted to try a taste too!)

1. Guilt-free cauliflower pizza bites
2. Lazy-man's healthy "bananas foster"



Actually, both recipes were also a lazy attempt to use up stuff in my fridge that I need to eat soon, or before I know it, it'll go bad. 

The recipe for pizza bites called for cauliflower (which I had) and cottage cheese (which I didn't), but I did have some greek yogurt that I needed to eat up, so I used that. I also added about 1/2 cup of shredded cheese and 1/3 cup of thinly sliced turkey pepperoni (they ARE pizza bites after all)!

I gobbled up the pizza bites, but I will admit they were a bit of a disappointment if you are expecting pizza. However, they are healthy, LGL friendly and give you a full 2 servings of veggies! Not bad for eating "pizza". Then, I had a bit of a sweet tooth, and I still had leftover greek yogurt and some past-prime bananas. I had seen baked banana slices drizzled with honey and cinnamon, and I said "hey, that sounds good" and the oven was still hot, so once baked at 350* for 10mins, I threw the bananas on top of 1/2 cup of greek yogurt. Turns out, it's pretty good, and I looked up "bananas foster" which has rum in it (which this doesn't) but aside from that, it was pretty darn tasty, and I used up all my soon-to-spoil ingredients!



FOOD
Breakfast: a few "carrot cake" bites, a pear and some cinnamon oatmeal
Lunch: split pea soup (progresso) and some raw green beans
Snack: CC bites, a small banana and a whole grapefruit
Dinner: cauliflower pizza bites with marinara sauce
Snack: lazy-man's banana foster 

EXERCISE
I'm in a lazy-man's slump.
